I've never seen the doors unlock under any other circumstance. If they unlocked when the engine switched to off or the tranny was put into park then the that would be great.
Don't know about the X5 yet, but previous BMW's I've owned are the same as you describe. Because it annoyed me so much, I set the door locks to NOT lock automatically when driving. I assume this can be done in the X5, but maybe you don't want to do that for safety reasons.
