I've replaced my M6 steering wheel due to this. As much as I try to keep my steering wheel clean, sometimes it's the mechanics at service with oil on their hands that permanently ruin it and sometimes it's the valet people.

My second steering wheel on my M6 has been maintained in factory new condition during the past year and half. I use Swissvax Leather Cleaner and the brush that comes with it. I gently spray and brush the steering wheel and wipe it down with a slightly damp cotton towel. Whenever I detect any change from the factory matte feel, I use this to bring it back. Once it passes a certain point however, it won't be like factory new again.

My X6's M sport steering wheel has become quite glossy in one year from not maintaining it the same way. Still not as bad as some other people's super shiny gloss I often see.
