The system has timeout for compressor to reduce moisture inside system. The system will usually gey it right on 3rd key cycle after a 20 min wait with doors closed and nothing disturbed and switched off. The system needs to go to sleep for the key cycle to be closed and another key cycle counted. If you messed with it after drive or key cycle then you interrupted the system getting back to normal. when they decided water in the system was taboo many years back they made the auto air systems on Euro brands aggravating. I've seen the same on Jeep grand cherokee owing to their Benz heritage for those couple of generations (probably applies to the Fiat ones too).
