Not too worried about the speedo being off (mines seems to be about 2 mph slow anyway) but I worry about them sticking out too far for my taste and ride comfort. Want to keep as much side wall as I can for ride quality. I'm old enough that my butt means more to me than my ego........

I believe you're referring to the MPSS's I had on the 375s, they were 285/35/21 and 325/30/21.
Currently I have a set of Yokohama BluEarth winter tires that are the same size.
Keep in mind I am running 5/15mm spacers as well.
