I have three car seats in the back of my X5M, not a problem at all. We've used it on 20+ hour/week and a half road trip vacations and it fits all our luggage in the back no problem. I don't know how the X6M is, but the X5M is fine. You definitely don't need a Yukon or minivan.
Regarding using latch for all three seats, that's impossible. You can only use it for the two outer seats, as with most cars.
