Are you stating that the 20's don't come with very many options, so you want to go to 21's for more tire selection....but you don't like the Michelin's in the 21" sizing?

So truly it comes down to wanting a thicker profile or larger aspect ratio. Width of wheels isn’t a concern unless it just doesn’t make sense. But I’m aiming more towards ride comfort, and less towards “performance.” But I’m not completely ignoring performance either lol. Honestly I just really don’t like the Michelin PSS or run flat tires.
