This recently happened to my X5M also. when I pulled over to check oil level, which I do frequently, it was showing oil level a little below half. I went to BMW service the next day and they added 1 quart. When they were done I drove for awhile and pulled over to check oil level and it was full. If you took 2 quarts of oil perhaps your oil indicator message was late. If I would have added 2 quarts without checking I would have been way over full.
