Dumb question, will these fit on OEM 20" Wheels for the X5 ///M with these being more narrow?

Yes, they will fit. I used 275s on 285 rims on my X6M a few years ago when 285s were on backorder. The difference is maybe 1/2 inch.

Sorry forgot to reply back, the tires you requested I've never heard of, and staggered 21 inches winter tires are impossible to find, most people run square winter tires.

Yokohama BluEarth for the 21” staggered winter tire. I had mine installed last week, nice tire.
