Fava beans and basmati rice, with grilled Chaldean flatbread
My take on Egyptian-Arab ful mudammas (fava bean stew) and biryani (pilaf). Base masala (flavor base) includes tempered cumin and coriander seeds, onions, garlic, chile pepper, and tomatoes with salt, pepper and powdered cumin. To this base a can of fava beans was added, then basmati rice and water. Then brought to a boil and simmered on low for one hour. Drizzled with tahini. Vegetarian, vegan and so good! Strawberries for dessert. |
